Chilled Chicken Summer Salad
Why don't cooks trust secrets with their spaghetti noodles?! Because they pasta everything along. Now, with that giggle, let's dive into our lightly spicy and refreshing Chilled Chicken Summer Salad using crispy noodles! Beware of chatty noodles while working!

Ingredients:
- 2 pieces Chicken breast
- 30g sweet chilli sauce
- 50g crispy noodles
- 1 small cucumber
- 8 Cherry tomatoes
- 1 small red onion
- Handful of coriander
- 2 tablespoons of lime juice
- 1 tablespoon of fish sauce
- Salt for taste
- Pepper for taste
Instructions:
- Cook the chicken breast, seasoned with salt and pepper, over medium heat till fully cooked.
- Once cooked, set the chicken aside to cool, then chop into small sized cubes.
- Chop cucumber, cherry tomatoes, red onion and coriander into bite-sized pieces.
- In a large salad bowl, mix together little chopped chicken, crispy noodles, and the freshly cut vegetables.
- Prepare the dressing by mixing sweet chilli sauce, lime juice, and fish sauce in a small bowl.
- Drizzle the dressing all over the salad and toss everything together to ensure an even coating.
- Let it chill in the fridge for around 15 minutes.
- Take out the chilled salad, give a quick toss and serve.
Notes:
Optional: Sprinkle crushed peanuts or sesame seeds for extra crunch just before serving.
