Mediterranean Chicken Orzo Salad

Ingredients:
  • 200g of cooked chicken, chopped
  • 150g of Orzo
  • 75g of Feta, crumbled
  • 1/2 Red onion, thinly sliced
  • 150g of Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 2 tablespoons of Olive oil
  • 1 tablespoon of Honey
  • Juice from 1/2 a Lemon
  • 1 cup of Spinach leaves
Instructions:
  1. Cook the orzo according to packet instructions. Once done, rinse under cold water and set aside.
  2. While the orzo is cooking, prepare your salad vegetables; slice the red onion, halve the tomatoes, and dice the cucumber.
  3. In a large bowl, combine the cooled orzo, the chopped cooked chicken, crumbled feta, prepared vegetables, spinach leaves, olive oil, honey, and lemon juice.
  4. Toss until all the ingredients are well combined and the salad is well coated in the olive oil, honey, and lemon juice dressing.
  5. Season with a pinch of salt and pepper, to taste. The salad can be served immediately, or refrigerated to let the flavours blend.
Notes:

Substitute the protein with tofu or chickpeas for a vegetarian take on this recipe.
