Chicken and Chickpea Greek Pasta Salad
You know what they say about a well-dressed salad? It's pasta its prime! Enjoy this refreshing and hearty Chicken and Chickpea Greek Pasta Salad with a twist.

Ingredients:
- 200 grams Pasta spirals
- 8 Cherry Tomatoes, halved
- 1/2 Cucumber, diced
- 200 grams Cooked chicken, sliced
- 1 can (400g) Canned chickpeas, drained and rinsed
- A handful of fresh Basil leaves, finely chopped
- 100 grams Feta, crumbled
- 3 tablespoons Olive oil
- Juice of 1 Lemon
- Salt and Pepper, to taste
Instructions:
- Cook the pasta spirals as per the instructions on the packet in a large pot of salted water.
- While the pasta is cooking, chop your cherry tomatoes into halves, dice cucumber, slice chicken, and crumble feta.
- Drain pasta and rinse under cool water. Set aside to cool further.
- In a large bowl combine pasta, chopped tomatoes, diced cucumber, sliced chicken, drained chickpeas, and crumbled feta.
- Juice a lemon. In a small bowl mix the olive oil, lemon juice, and season with salt and pepper to taste.
- Pour the dressing over the salad and toss well to combine. Sprinkle on the finely chopped basil leaves.
- Serve immediately or refrigerate to let the flavours meld together.
Notes:
Add a dollop of yogurt or some chopped olives for extra flavor, if you wish. Remember to adjust the ingredients to your taste.
